1 box of frozen chopped spinach
2 Eggs
1/2 Cup grated cheese
1/2 Cup bread crumbs
Salt and pepper

Directions:
Directions:
Cook spinach as directed on the package.Drain and cool
Mix into batter of eggs,cheese and bread crumbs. Season with salt and pepper
In large frying pan, add oil about 1-2 Tablespoons heat.
Add spinach mixture and pat down evenly.
Brown for about 25 minutes on each side.

When turning the fritata, use a dinner plate and place it over the frying pan,invert quickly and slide back into the pan.
Use a non-stick frying pan if you have one it makes this process easier!
