1 - 12 oz. pkg. jumbo pasta shells
2 eggs, beaten
1 - 32 oz. container of ricotta cheese
1 lb. shredded mozzarella cheese, cut in half
8 oz. grated Parmesan cheese, cut in half
1 Tbsp. dried parsley
2 tsp. salt
1 tsp. ground black pepper
Your favorite pasta sauce

Directions:

Preheat oven to 350ºF.

Bring a large pot of salted water to a boil. Add pasta. Cook for 8-10 minutes or until al dente. Then drain.

In large bowl, mix eggs ricotta, half of the mozzarella, half of the Parmesan, parsley, salt and peper until well combined.

Stuff cooked shells with ricotta, mixture and put in a 9x13 baking dish.

In medium bowl, stir together the pasta sauce and remaining mozzarella and parmesan cheeses.

Pour over stuffed shells and bake for 45-60 minutes until shells are slightly set.
