Place sausage into skillet and cook over medium heat 8 - 10 minutes or until no longer pink, breaking into crumbles. Remove sausage from skillet and set aside.
As sausage cooks, bring salted water to a boil; add tortellini and cook according to package directions.
As sausage and tortellini cook, place spinach into a large colander.
Finely dice bell pepper.
Drain tortellini over spinach in colander.
Add diced bell pepper to the skillet and sauté for 1 - 2 minutes. Reduce heat to low; add sausage, tortellini and spinach. Gently toss to coat.
To serve, spoon tortellini mixture onto serving plates.
Sprinkle with black pepper and/or parmesan cheese, if desired.
