4 cups mixed greens,
washed and dried
1/2 red onion, cut into thin rings
2 Granny Smith apples,
cored & sliced thin
Salt and ground pepper
1/2 cup blue cheese or feta cheese
1/2 cup walnuts, toasted

Maple Vinaigrette Dressing Below
Directions:
Directions:
In large bowl, combine greens, apple slices & onion rings. Season with salt & pepper. Pour enough dressing over the salad to coat and toss. Save rest of dressing for another salad. Top with crumbled cheese and nuts. Serve immediately.
 

Maple Vinaigrette Dressing
Ingredients:  
Ingredients:  
1 teaspoon ground mustard
1/4 cup cider vinegar
1 garlic clove, minced
1/2 teaspoon dried basil
1/2 cup pure maple syrup
1 cup extra-virgin olive oil
salt & pepper to taste
Directions:
Directions:
Combine all except the olive oil in a small bowl. Add the olive oil slowly in a steady stream, whisking constantly until combined. Season with salt & pepper.
