Cheese Rolls Recipe

3 cups milk
3/4 cups Crisco
3/4 cups sugar
2 eggs, beaten
2 pkgs. yeast
7 cups + 1 cup flour
3 teaspoons salt
grated cheddar cheese
1 cup butter, melted

Directions:
Directions:
Place yeast in 2/3 cup warm water for 5 minutes before stirring.
Heat first 3 ingredients to boiling. Add the 2 beaten eggs. Add the yeast.
Add 7 cups flour and 3 tsp. salt. Mix well, then add 1 more cup flour.
Let rise to double (approximately 1 1/2 hour)
Divide dough in half. Roll on floured surface to 1/2 inch thick.
Brush melted butter on dough and cover with grated cheese.
Roll up dough and cut into slices.
Place each slice in a greased muffin tin.
Let the dough rise again for about 45 minutes. (Can be set in oven with a pan of hot water with a wet cloth over rolls to rise.)
Bake at 300 degrees for 20-25 minutes. Can be made ahead of time.
To serve, heat at 400 degrees for 10 minutes.

This recipe came from Grandmother. I used to make it every year for Thanksgiving when we celebrated the holiday with the Parsons.
