3 cups unsifted flour, divided
1 tsp salt
1½ cups shortening
¾ cup water

Directions:
Directions:
Mix together: 2½ cups flour and salt. Add shortening to flour and mix with a fork. Add water and stir until well blended. Add remaining flour and blend well. Roll out on floured surface, cut and place in pans. Bake at 400º for approximately 15 to 20 minutes. Yields 5 single 9" shells. The dough may be frozen but it will alter the texture slightly. You may roll and reroll the curst and it will be tender and flaky.
