3 eggs
1 cup sugar
2 Tbsp shortening, melted (butter may be substituted)
3 tsp baking powder
1 tsp salt
1 tsp nutmeg
3½ cups flour
1 cup whole milk

Glaze:
⅓ cup boiling water
1 cup powdered sugar
Dash vanilla (optional)

Directions:
Directions:
In a medium sized bowl, beat eggs until very light. Whisk in sugar, then the melted shortening. Sift the baking powder, salt, and nutmeg with 1 cup flour and stir into the egg mixture, alternating with milk. Add remaining (or enough) flour to make a soft dough. Turn dough onto a floured surface and cut out donuts. These donuts don't need to rise! Fry in hot oil (about 375º) for about one minute per side (until golden). Remember that hot oil should not smoke! Drain on paper towels. Drizzle with Glaze, or shake in a bag of granulated or powdered sugar. Makes about 12 donuts. Want chocolate donuts? Add a couple of melted unsweetened chocolate squares along with eggs and sugar. Or give them a zip with some grated lemon or orange peel.
