1 large duck or 2 small duck or 2 Cornish hens
1 bottle Russian salad dressing
1 package dry onion soup mix
1 jar (12 oz.) peach preserves

Directions:
Directions:
Preheat oven to 375º.

Quarter the birds and array them in a baking pan.
In a bowl, mix the salad dressing, soup mix and peach preserves; mixing thoroughly.
Pour mixture over the bird pieces.
Bake in 375º oven for 1 hour or until the birds are tender and the sauce has thickened.
