4 c. spinach leaves, torn
1 11-oz. can mandarin oranges, drained
1/2 c. sliced red onion
3 T. distilled white vinegar
2 T. vegetable oil
1 T. honey
1/2 tsp. salt
few grindings black pepper
2 T. slivered almonds (optional)

Directions:
Directions:
Remove the coarse stems from the spinach, then wash and dry the leaves. Transfer the spinach to a large bowl and tear it into bite-size pieces; add the orange slices and onion; toss gently to mix. In a separate bowl, mix together the vinegar, oil, honey, salt, and pepper. Pour over the spinach mixture. Sprinkle almonds over the top, if desired.
