2 ⅓ C all-purpose flour, sifted
1 T sugar
tsp ground cinnamon
tsp salt
C (1 stick) chilled butter, cut into small pieces
C vegetable shortening
6 T cold water
1 lg egg, lightly beaten

FILLING:
7 med Granny Smith apples, peeled, cored and thinly sliced
C sugar
1 tsp ground cinnamon
tsp ground nutmeg
2 T butter, cut into small pieces

In a lg bowl, mix together flour, sugar, cinnamon, and salt. Using a pastry blender or two knives, cut butter and shortening into flour mixture until coarse crumbs form.

Add water, 1 T at a time, tossing with a fork until a dough forms. Divide dough in half; shape each half into a disk. Wrap in plastic wrap; chill for 1 hour. Nnn

FILLING:
Place oven rack in lowest position. Preheat oven to 400. In a large mixing bowl, combine apples, sugar, cinnamon, and nutmeg.

Use a 9" pie pan... on a lightly floured surface, using a lightly floured rolling pin, roll half of dough into an 11-inch circle. Fit into pie pan.

Spoon filling into pan. Dot with butter pieces. Roll remaining dough into a 10" circle. Place on top or cut into " strips, for a lattice top... Bake at 400 brush crust with egg. Bake until crust is golden and filling is bubbly about 40 min.

Squeeze lemon juice over the filling to keep the apples from browning.
