2 c chopped peppers, use yellow, red and green
16 oz bow tie pasta
1/2 c diced celery
2 c chopped onions
1 clove minced garlic
1 stick butter
2 pounds crawfish tails
16oz pepper jack cheese, grated
2 1/2 c heavy cream
1/2 c parmesan cheese
1-2 T creole seasoning
1 t salt

Directions:
Directions:
350º cook pasta in a large pot of salted boiling water until tender. Drain pasta and set aside. Saute onions, garlic, celery and peppers in butter until tender. Add salt, creole seasoning salt and heavy cream. Stir over medium heat until mixture is hot. add pepper jack cheese and stir until cheese has melted and blended int the sauce. Add crawfish and cook on medium low 10 minutes, stirring occasionally. Remove pot from heat and fold in the pasta & parmesan cheese. Coat the bottom and edge of a large glass casserole dish, 13 x 9, pour the past mixture into the dish and bake 30 minutes.
