3 Eggs
2 C. White Sugar
1 C. Liquid Oil
3 tsp. Vanilla
2 C . Flour
2 tsp. Fresh Baking Soda
1 tsp. Baking Powder
2 C. Raw Zucchini (grated)
1 C. Nuts (optional)

Directions:
Directions:
Mix all ingredients in order listed, pour into greased baking pan. Bake for 1 hour at 350. For muffins bake for 20 minutes at 350 degrees. Makes 2 loaves of bread or 24 muffins.

Bread can be wrapped in foil then put in freezer bag when cooled to freeze.

Put zucchini in blender (peeled,) grate orc hope finely, place 2 cups in freezer bags to use for later.
