6 cups shredded zucchini
2 cups shredded Swiss cheese
4 eggs
1 cup Bisquick
1/4 cup salad oil
1/2 teaspoon salt
1/4 teaspoon Italian seasoning
1/2 cup sliced fresh mushrooms

Directions:
Directions:
Preheat oven to 400. Grease a 9-inch pie plate.

In large bowl with fork, mix all ingredients. Pour mixture into prepared pie plate. Bake 30 to 35 minutes until golden brown and knife inserted in center comes out clean.

This is one of the very first meals I made for Steve. Good thing he liked the rest of my cooking as this wasn't one he cared for. It's really good and a great way to use zucchini in the summer months.
