1 kg. potatoes
350 grams flour
1 egg
1 teaspoon salt

Directions:
Boil potatoes with the skin in slated water. When ready take out and peel the skin off. Pass the potatoes through a food mill or potato crusher. Add the flour and eggs, mix until smooth, and more flour if the mix is too soft. Shape it into long rods the thickness of a finger, then cut them into pieces 3/4 inches long, sprinkling liberally with flour to avoid sticking. Boil in abundant salted water for two minutes. They are ready when they float to the top. Remove with a strainer and place in a bowl or serving dish, alternating with a sauce of your choice. Also good with just butter and parmesan, or butter and truffles.
