Coconut Balls:
3/4 c. mashed potatoes
1 (16 oz.) package powder sugar
4 c. flaked coconut
1 tsp. almond extract

Chocolate coating:
2 T. butter or margarine, soft
3 T. Water
1 package chocolate fudge frosting mix, dry
2 T. corn syrup

Coconut Balls:
In a bowl, combine all ingredients; mix well.
Drop mixture by heaping teaspoons full onto waxed paper. Roll mixture into balls; chill 1/2 to 1 hour or until firm. (If mixture is to soft to form balls, chill before shaping.

Chocolate coating:
In top of a double boiler, mix butter, corn syrup and water; mix well.
Stir in dry frosting mix; stirring until smooth.
Heat over rapidly boiling water for 5 minutes, stirring occasionally.

Using a toothpick, dip each chilled ball into the chocolate coating mixture; place on waxed paper.
Cover toothpick hole with chocolate coating; cool before serving.
