Mom's Cut Out Cookies (Sand Tarts) Recipe

9 oz. margarine (Mom always used Blue Bonnet and they don't taste the same with anything else!)
2 cups sugar
2 eggs
1 tsp baking soda
1/2 tsp salt
4 cups plus 2 T flour

Cream margarine and sugar. Add eggs and mix. Stir in baking soda and salt. Add flour gradually and mix well, you may have to use your hands.

Chill dough for 1 hour.

Working with a baseball size chunk at a time, roll out thinly on a floured surface.(this dough is meant to be THIN!)

Cut into desired shapes and sprinkle with colored sugar.

Place on cookie sheet and bake at 350 for 8-10 minutes, until slightly brown around the edges.

Remove from cookie sheet to cool.

This makes about 8 dozen cookies! Recipe may be halved.
