Ingredients:  
2 chicken breasts
1 egg
water
Plain bread crumbs
1 cup chicken broth
1/3 cup lemon juice
1/4 cup white wine

Directions:
Directions:
Butterfly chicken breasts and pound to about 1/4 inch thickness
Mix egg and a little water. Dip chicken pieces into egg and then into bread crumbs. Brown both sides in
2 T melted butter in a large frying pan. Add chicken broth, lemon juice and wine. Cover and simmer one hour. Most liquid will evaporate. serve with any pan sauce left.
