Ingredients:  
3 lb chicken thighs, cut into bite sized pieces
4 oz soy sauce
4 oz bourbon
4 cloves garlic minced
2 T fresh grated ginger
2 oz olive oil
1/4 cup brown sugar
1 scallion, sliced, with green parts too

Directions:
Directions:
Mix all ingredients except chicken.
Pour into zip lock bag. Add chicken and marinate for several hours or overnight.
Remove chicken from marinade and slide onto skewers.
Grill or broil until chicken is cooked through.

Serve with rice.
