German Potato Salad Recipe

3 medium potatoes, peeled and thinly sliced
1/2 cup water
4 slices bacon, chopped
1/2 cup chopped onion
2 T all purpose flour
1/2 cup vinegar (I use apple cider vinegar)
3 T sugar
1 tsp salt
dash pepper
2 T fresh chopped parsley (optional)

Directions:
Directions:
In a 1 1/2 quart casserole, combine potatoes and water. Micro-cook, covered, 9-10 minutes. Stir every three minutes. Drain, remove potatoes from casserole.

In the same casserole cook bacon and onion, covered with paper towels, 3 1/2 minutes. Stir after two minutes. Stir in Flour. Blend in vinegar, sugar, salt, pepper and 1/3 cup water. Micro-cook uncovered, until bubbly, about 1 1/2 minutes, stir every thirty seconds.

Add potatoes, Cook Covered until heated through. Stir in parsley. Serve warm.
