1 lb Italian turkey sausage (casings removed and crumbled)
1 clove garlic, minced
3 1/2 cups chicken stock
1 15oz can diced Italian style tomatoes
1 cup shredded carrots
1 15 oz can cannelloni beans, undrained
2 small zucchini, cubed
1/4 tsp black pepper
1/2 tsp dried oregano
1/2 tsp. dried basil
salt to taste
2 cups spinach, packed, rinsed and torn
1 8-19oz pkg. fresh cheese tortellini

In a large stockpot, brown sausage with garlic. Stir in stock, tomatoes and carrots. Reduce heat, cover and simmer 15 minutes. Stir in beans with liquid and zucchini, pepper, oregano, basil and tortellini. Cover and simmer 10-15 minutes or until zucchini is tender. Remove from heat, salt to taste. Add spinach and stir. replace lid allowing heat from the pot to cook the spinach. After about five minutes, soup is ready to serve.
