4 T butter
i large onion, diced
1 cup celery, small diced
2 cloves garlic, minced
1/4 cup flour
1 qt half and half
3 cups chicken broth or stock
1 1/2 cups carrots shredded
1 cup fresh spinach, chopped roughly
1/4 tsp thyme
1/2 tsp parsley
1 cup chicken, cooked and diced (use rotisserie leftover)
1 lb package gnocchi
salt and pepper to taste

Directions:
Directions:
In a large soup pot, melt butter over medium heat. Add onion and celery and cook, stirring occasionally, until onion is translucent, about 5-7 minutes. Add garlic and cook thirty seconds.

Sprinkle in the flour and stir constantly about 2 minutes.

Slowly whisk in the half and half and simmer until thickened. Whisk in the chicken broth and simmer until thickened. 2-3 minutes.

Add the carrots, spinach leaves, thyme, parsley, chicken and gnocchi. Continue to cook until all ingredients are heated through.

Season with salt and pepper to taste.
