12 corn tortillas
2 cans mild (or medium) enchilada sauce
1lb shredded mild cheddar or colby-jack cheese
1 small can diced green chiles
1 small onion, minced (optional)

Directions:
Directions:
Preheat oven to 350º. Heat one can of enchilada sauce in a small frying pan, just to warm.
Spray 9x13 casserole dish with food release spray. pour a small amount of sauce into coat bottom of pan.
Dip one tortilla at a time into sauce and flip to coat both sides. Allow as much as possible to drip back into pan. Lay tortilla on a plate and place cheese, some chiles and some onion down center. Roll and place in pan. Repeat with remaining shells. Pour the rest of the enchilada sauce over the top of the rolled tortillas, if not enough to cover use from second can. Add remaining or additional cheese on top and cover with foil. bake about 30 minutes or until cheeses are melted and sauce is bubbling.
