Ingredients: 4-6 thinly sliced pieces of beef round steak 1-2 T mustard 1 sliced onion pepper paprika 2 carrots sliced into thin sticks 4-6 slices of bacon 1 cup beef stock 1 T butter 1 T flour 1/4 cup cream or half and half

Directions:Lightly pound beef slices. Season with salt pepper and paprika. Spread with mustard.Fit one slice of bacon onto each beef slice so none is hanging over the edges. sprinkle with chopped onion and lay one to two carrot sticks at one end. Roll up starting at the end with the carrot sticks. Secure roll with toothpick. Melt butter in skillet and add beef rolls, turning to brown all sides. Add beef stock and cook on low until meat is fork tender. Remove beef rolls. Stir flour into cream. Increase heat so pan juices simmer. Add cream and flour mixture. Stir and cook to thicken. If sauce is too thick add water.Return beef rolls to pan, turning to coat. Simmer 15-20 minutes. Serve over noodles or with mashed potatoes. Remove toothpicks before serving. |
