1 Tbsp. Olive Oil
4 Skinless, boneless chicken breast halves cubed
1 Onion, chopped
1¼ C. Chicken Broth
1 4 oz. Can Diced Green Chiles
1 tsp. Garlic Powder
1 tsp. Ground Cumin
½tsp. Dried Oregano
½ tsp. Dried Cilantro
⅛ tsp. Cayenne Pepper
3 15 oz. Cans Cannellini Beans (drained & rinsed)
(puree at least one can of beans, mix with a little chicken broth to make thicker)
1 Green Onion, Chopped
2 oz. Shredded Monterey Jack Cheese

1. Heat oil in large saucepan over medium high heat.
2. Cook chicken and onion in oil 4-5 minutes or until onion is tender
3. Stir the chicken broth, green chiles, garlic powder, cumin, oregano, cilantro and cayenne pepper
4. Reduce heat and simmer for 15 minutes.
5. Stir in the beans and simmer for 5 more minutes or until chicken is no longer pink and juices run clear.
6. Garnish with green onion, shredded cheese, cilantro and crushed tortilla chips.
