Slow Cooker Chicken Cacciatore Recipe

Pelletier Family


6 pieces chicken. Can be chicken thighs, but I like boneless.
2 cloves of garlic
150 ml red wine
2 tbls olive oil
2 tsp crushed red pepper flakes
1/2 tsp fresh ground black pepper
10 oz sliced mushrooms
1 can tomato paste
1 can diced tomatoes
1 can whole plum tomatoes
1 - 2 tsp of each to taste: oregano and parsley
1 - 2 tsp each of fresh thyme and basil

Set aside chicken, mix all other ingredients into the slow cooker. Once ingredients have been combined evenly, add chicken into the crock pot. Make sure that all the chicken is covered and coated with the mixture.

Cook on low for 6 - 8 hours.

Serve over pasta... our family favourite for this dish is linguine.
