1 Italian eggplant
garlic powder to taste
dash of salt
1 heaping Tb. mayonnaise or tahini (optional)
paprika to garnish

Directions:
Directions:
Wrap eggplant in foil. Roast over low gas flame until soft, turning every 5 minutes. Remove from flame. (If you don't have a gas flame, bake in oven until skin is charred.)

When cool enough to handle, unwrap. Peel back skin and scoop out flesh. Add garlic powder, salt, and mayo or tahini if desired. If stringy, pulse with stick blender. Don't overblend.

Garnish with paprika.
