1 ¾ C. diced potatoes
1 C. onion diced
1 ¼ C. celery diced
1 ½ C. carrot diced
⅓ C. melted margarine
2 C. chicken broth
1 C. Half & Half
1 tsp. salt
¼ tsp. black pepper
4 C. chicken cooked and chopped
4 pie crusts

Preheat oven to 400º. Sautee onion, celery, carrots, and potatoes in margarine for 10 minutes. Add flour while stirring. Cook 1 minute stirring constantly. Add broth till thickened and bubbly. Stir in salt and pepper. Add chicken and stir well. Pour into 2 qt. casserole dish and top with pie shells. Cut slits in shells to allow steam out. Bake 40-50 minutes; pastry should be golden brown and filling bubbly and cooked through.

Mike’s note: When I saw Kat make this she did it in two pie pans instead of the casserole dish; one pie crust under each and one over the tops. I asked her how it did as far as freezing the leftovers and she said she didn’t know, never had had any leftover.
