1½ c. chopped celery
1 c. chopped onion
4 Tb. oil
1 (14.75 oz.) can salmon, drained and bones removed
2 eggs, lightly beaten
4 Tb. milk or milk alternative
2 c. soft bread crumbs*

1/2 tsp. salt
1/2 tsp. pepper
olive oil cooking spray

*To make lower carb, substitute:
3/4 c. coconut flour
1/4 c. fine almond meal

Directions:

Preheat oven to 350ºF.

In a skillet, sauté celery and onion in oil until tender.

In a bowl, combine the salmon, egg, milk, bread crumbs, salt and pepper, and celery/onion mixture.

Spray mini-loaf pans or ramekins with cooking spray. Transfer salmon mixture.

Bake until a knife inserted in the center comes out clean (approximately 40 minutes depending on size of pans).

Garnish with lemon slices. Can be served with a dill sauce.
