1/2 c. butter (1 stick)
3 egg yolks
3 Tb. fresh lemon juice
white pepper or cayenne pepper

Combine ingredients in a small saucepan. Let stand at room temperature until butter is soft (45-60 minutes).

Five minutes before serving time, place the saucepan over low heat and stir constantly until the sauce thickens.

Use this for eggs Benedict and eggs Florentine. Also, can use as a sauce for steamed vegetables (for example, asparagus or broccoli).
