2 c. plain yogurt
4 large Hothouse cucumbers
4 cloves garlic, minced
1 Tb. white vinegar
2 Tb. extra virgin olive oil
salt & pepper to taste

Put yogurt in cheesecloth-lined sieve over bowl and drain whey overnight.

Peel and coarsely grate cucumbers. Drain well.

Add garlic, vinegar, oil, and salt and pepper to cucumbers and mix well. Add yogurt and hand blend.

This looks nice garnished with red radishes and chopped parsley or mint.

To make it pareve, substitute Tofutti Sour Supreme for the yogurt. The pareve version can be served with gyros or shawarma.
