2 c. plain yogurt
4 large Hothouse cucumbers
4 cloves garlic, minced
1 T. white vinegar
2 T. extra virgin olive oil
salt & pepper to taste

Directions:
Directions:
Put yogurt in cheesecloth lined sieve over bowl and drain whey overnight.

Peel and coarsely grate cucumbers. Drain well. Add garlic, vinegar, oil, and salt and pepper and mix well. Add yogurt and hand blend.

Looks nice garnished with red radishes and chopped parsley or mint.

To make pareve version, substitute Tofutti Sour Supreme for yogurt. Can then be served with gyros or shwarma.
