11/2lbs. Mackerel fillets or boned Kingfish steaks
11/2tsp. salt, divided
3T. flour
3/4c. olive oil
1c. chopped red onion
1/2c. sliced stuffed olives
1/4c. parsley
1/2c. white vinegar
1-2 lg. unpeeled cloves of garlic, crushed
2tsp. paprika
1/4tsp. cayenne, or to taste

Directions:
Directions:
Cut fish into 3in. pieces.
Sprinkle with 1tsp. salt and coat with flour.
Heat 1/4c. oil in a skillet.
Fry fish over medium - high heat until browned on both sides.
Place fish, overlapping slightly in a 12x8x2 dish.
Sprinkle with onion, olives, parsley and vinegar.
Heat remaining 1/2c. oil in skillet.
Add garlic and saute until golden brown.
Remove skillet from heat.
Stir in paprika, remaining salt and cayenne.
Pour while hot over fish.
Cover and refrigerate for 24hrs.
Bring to room temperature before serving.
Will keep up to 5 days if refrigerated.
