2 10 oz cans black beans, liquid drained and reserved.
1 medium yellow onion, chopped
1 green pepper, chopped
4 garlic cloves, minced
1 tsp. cumin
½ tsp oregano
½ tsp salt
1 T red wine vinegar

Directions:
Directions:
Saute onion and pepper in a little olive oil (about 15 minutes, add garlic for 5 minutes. Introduce a little of the bean liquid until all previous ingredients are soft.

Add beans with the remaining liquid. Add spices and simmer about 30 minutes.

Add vinegar just before serving.

Best served over white rice seasoned with a spritz of lime juice and topped with a teaspoon of chopped white onion.
