2 lbs ground beef
1 medium onion, chopped
1 can tomato paste
1 tomato paste can of water
2 eggs, beaten
1 cup oatmeal
1 medium green pepper, chopped
1 large garlic clove
1 tsp dried thyme (or Herb de Provence, if available)
3/4 tsp salt
black pepper to taste

Preheat oven to 350 F. Mix all ingredients well in a bowl and make into meatballs using 1/4 c. of mixture for each. It should make approximately 23 meatballs. Arrange meatballs on a greased cookie sheet or other sheet type pan. Make sure the pan has edges though or the drippings will run off into oven. Bake at 350 for 15 minutes then turn meatballs over for another 15 minutes. After you take them out of the oven, allow to cool a bit and then place each meatball on another clean cookie sheet with space separating them. When cooled enough, put in freezer. When frozen, put in a plastic baggie and use as needed.

When ready to heat them up, put the appropriate amount of sauce in a saucepan. Use either store bought sauce or, if you really want to do it up right, use the recipe for Caroline's Pizza Sauce in this recipe book. It is also her homemade spaghetti sauce recipe. Place the meatballs in the pan and cover with sauce. Bring to a simmer and cook until the meatballs are done. Put meatballs and sauce on cooked spaghetti with sprinkled Parmesan cheese and enjoy! For a complete meal, add a salad and her garlic bread recipe, also found in this book!
