3 eggs
1 cup cooking oil
2 cups sugar
2 cups zucchini squash (grated fine)
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
3 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1 cup chopped nuts

Directions:
Directions:
1. Beat eggs until foamy
2. Add oil, sugar, grated zucchini and vanilla.
3. Add dry ingredients and mix well.
4. Add nuts.
5. Turn into 2 loaf pans, greased and floured
6. Bake at 350 for 1 hour
