3 c. all purpose flour
1 tsp salt
1/2 c. shortening (like Spectrum)
*1 c. butter (2 sticks)
1 egg, beaten
5 tbsp very cold water
1 tbsp apple cider vinegar

* If you don't feel comfortable using so much butter, the recipe can also be made using 1 1/2 c. shortening and leave out the butter--but you won't get the same taste!

Mix flour and salt together. Cut shortening and butter into the flour/salt mixture until the texture is crumbly. Beat egg in separate bowl. Add cold water and vinegar to the beaten egg. Pour egg mixture into a "well" formed in the flour mixture. Gently mix. It is important that you not work it too much and try to work quickly, especially if you are using the butter as it will melt.

Divide dough into 4 equal parts and wrap each in plastic wrap. Each portion makes a single crust. Put the dough in the fridge overnight. Roll out quickly and press into a pie pan. Freeze for use later or use right away.
