2 1/4 cup powdered sugar
5 tablespoons shortening - divided (2+2) - not butter flavored
2 tablespoons coconut cream (best if cream is used from canned coconut milk)
2 teaspoons peppermint extract
1/4 teaspoon vanilla
1 bag chocolate chips
1/4 cup crushed peppermint candy

Directions:
Directions:
1. Sift sugar into mixing bowl.
2. Add 2 tablespoons shortening, coconut cream, and extracts. Mix by hand until smooth
3. Roll dough into 1/2 inch thick log. Wrap in wax paper and place in fridge 30 minutes to 1 hour
4. Remove log from fridge and slice in 1/4 inch pieces
5. Combine chocolate chips and 2 tablespoons shortening in bowl. Microwave in 30 second increments until melted fully.
6. Dunk each 1/4 inch piece into the chocolate one at a time and place on wax paper. Sprinkle with crushed peppermint candy while still wet.
5. Let set for several hours in cool room or fridge.

Best if kept in storage container in fridge.

***can be made dairy free by using dairy free chocolate chips.
