2-3 boneless butterflied pork chops
1 Tbsp coconut oil
1 Tbsp cornstarch or arrowroot powder
1 Tbsp soy sauce
3 Tbsp vinegar
6 Tbsp water
cup sugar
1 can pineapple chunks or tidbits (reserve the juice)
4 cups cooked rice

Directions:
Directions:
Cut pork chops into bite size pieces and cook in oil until done. Set aside.
Add pineapple juice to pan that pork chops were cooked in.
Add cornstarch, soy sauce, vinegar, water and sugar. Stir constantly and cook until thick.
Combine sauce, pineapple and meat.
Serve over bed of rice.
