2 lb Brussels sprouts
1 C honey
1⁄4 C white wine vinegar
1 T pink peppercorns
2 sprigs fresh rosemary
1⁄2 C chopped red onion
1⁄2 C dried cherries. ( I used Bing, but I think tart might be better)
3 slices pancetta, fried and crumbled

Combine honey, ww vinegar, peppercorns and rosemary. Heat over low for 15-20 minutes. Strain. Careful that it doesn't boil over....big

Clean sprouts of outer leaves. Save the leaves. Quarter sprouts. Sear sprouts in oil and salt, until they are nicely browned. Add onion and sear those as well. Now add outer leaves and heat until the leaves wilt. Add cherries. Finish with honey mixture to taste. Add pancetta, salt and serve
This should make about 8 servings

Christmas 2015. It's a big hit with everyone. Even people that say they don't like Brussel sprouts
