1 tbsp. butter
2 tbsp. flour
⅛ tsp. salt
Vegetable water (the water that your vegetables were boiled in)

Directions:

1. Melt butter in sauce pan.

2. Add flour and salt.

3. Mix to form a soft paste.

4. When mixture is slightly brown, add boiling vegetable water, a little at a time, stirring constantly.

5. Pour the sauce over the drained vegetables.

This is the BASIC Butter Sauce recipe. Obviously, Mum did not use these measurements, and just prepared it, adjusting the amounts as necessary for the number of servings needed. Because she prepared meals for, not only her family, but several hungry hired men, she probably doubled, tripled, or quadrupled this basic recipe. For most people, the basic recipe will be sufficient.
