2 cups broccoli flowerets
1 lb skinless, boneless chicken breasts, cut into strips
1 green or red pepper, cut in 2" long strips
1 can fat free chicken gravy
1 T soy sauce
1/4 tsp ground ginger
4 cups hot cooked rice, cooked without salt

Directions:
Directions:
Spray skillet with vegetable cooking spray and heat over medium heat 1 minute. Stir-fry broccoli and pepper until tender-crisp. Set aside. Remove skillet from heat. Spray with cooking spray. Add chicken in two batches and stir-fry until browned. Set aside. Add gravy, soy and ginger. Heat to a boil. Return vegetables and chicken to pan. Heat through. Serve over rice.
