3 boneless, skinless chicken breast halves, cut into strips
1 T oil
1 onion, cut into thin strips
1 medium bell pepper, cut into strips
1-1/2 cups thick and chunky salsa (medium)

Directions:
Directions:
In skillet, saute chicken in oil over medium-high heat, 3 minutes.

Add onion and pepper, cook 3-4 minutes until tender and crisp.

Reduce heat; add salsa and simmer 2 minutes.

Serve over rice and garnish with cilantro, if desired.
