2 T. butter
1 clove of garlic, minced
1/2 small onion, finely diced
1/4 tsp. each of salt and pepper
1 pkg. spinach, chopped (fresh spinach is best)
1/4 tsp. dried thyme
1 T. all-purpose flour
1 c. warm milk
1/4 c. grated Parmesan cheese
1 pinch ground nutmeg

Directions:

In a large saucepan, melt 1 T. of the butter over medium-high heat.
Saute garlic and half of the onion, salt, and pepper for about 3 minutes or until the onion is softened.

In batches, add the spinach and cook, stirring for about 5 minutes or until the spinach is wilted and no liquid remains.

Transfer to a bowl.

Wipe out the pan; heat remaining butter over medium heat. Cook thyme and remaining onion, salt and pepper for about 3 minutes or until softened.

Stir in flour and cook for 1 minute.

Reduce heat to low. Add milk, a little at a time and cook, stirring for 3 to 5 minutes or until thickened.

Stir in cheese, nutmeg and spinach; heat through.
