Fiesta Chicken

¾ lb. boneless, skinless chicken breasts
2 cloves garlic, pressed
½ tsp. dried oregano
¼ c. fresh orange juice
1 T. fresh lime juice
1 tsp. olive oil
salt & pepper to taste

Place chicken breasts between 2 sheets of heavy duty plastic wrap. Using a meat mallet, flatten breasts to 1/4 in. even thickness. Rub chicken with garlic. Crush oregano between fingers and rub into chicken.

Combine orange juice and lime juice in a large, shallow container. Add chicken. Cover and marinate for 20+ minutes.

Remove chicken and discard marinade. Pat dry with paper towels.

Heat oil in a large skillet over medium-high heat. Add chicken and saute 4-6 minutes on each side or until browned. Sprinkle chicken with salt and pepper.

Serve with Fiesta Salsa and guacamole.
