1/2 cup dijon mustard
8 boneless, skinless chicken breast halves (about 2 lbs)
1 cup plain dry bread crumbs
1/4 cup vegetable oil

Directions:
Directions:
Spread mustard over chicken. Coat with bread crumbs. In large skillet, heat 2 T oil over medium. Add half of chicken and cook 4-5 minutes on each side or until browned and done. Remove from skillet and keep warm. Repeat with remaining chicken, adding remaining oil as needd.
