3 eggs
3 C sugar
1 cup of oil
1 tsp of vanilla
2 tsp of cinnamon
3 C sifted flour
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
3/4 C nuts optional
1 C coconut optional

Directions:
Directions:
Beat eggs until foamy. Add sugar, oil, zucchini and vanilla. Blend well. Add dry ingredients and spices. Mix until blended.
Fold in nuts and coconut if desired.
Put in two greased 9x5x2 inch load pans. Bake at 325 for one hour. Let stand for 10 minutes before removing from pans.
