Base
1 white cake mix
1/2 c margarine
1 egg
1 -2 tsp coconut extract (optional)

Filling
1 can vanilla icing
1 - 19 oz can crushed pineapple drained
250 gram cream cheese
2 eggs

Directions:

Base
Beat until well mixed. Pat into bottom of 13X9" pan

Filling
Mix filling ingredients except eggs
Reserve 1 cup of this mixture and put in fridge
Add 2 eggs to remaining mixture. Pour on cake mix. Bake 325 50-60 minutes or until golden brown (check after 30-40 minutes)
Cool 30 minutes
Frost with reserved 1 cup
Refrigerate about 2 hours and cut
