2 cups plain yogurt
1 large cucumber, peeled, seeded, and chopped
2 cloves garlic, finely chopped
2 tablespoons olive oil
1 tablespoon white wine vinegar
salt and freshly ground white pepper, to taste

Directions:
Directions:
Place drained yogurt in a mixing bowl. Fold in the cucumber, garlic, oil, and vinegar. Season with salt and pepper to taske. Refrigerate to give the flavors time to blend--1 hour or longer.
Serve with vegetables or pita bread
Makes about 2 cups.

Note: I made this for Book Club when we read a book set in Greece. I really liked it.
