Directions:
Brown beef and onions. Drain! Mix meat, mushrooms enchilada spice pack, and 1 jar of Pace salsa. Add salsa to spiciness preference. Add canned red beans. The more beans, the more the enchiladas can serve. Add a little sour cream and shredded cheese to taste. This is all done to YOUR taste. Simmer until cheese is melted. Pour mixture in flour tortilla shell. Separate with parchment paper for easy separation, but not necessary. Top with cheese and sauce. Bake at 350 degrees for 20 minutes or until done. Good to freeze.
