1/2 cup butter
1 cup sugar
2 eggs, beaten
2 tsp. baking powder
2 cups flour
1/2 tsp. salt
2 1/2 cups blueberries, divided (fresh or frozen)
1/2 cup milk
1/8 cup sugar for sprinkling

Preheat oven to 375º
In a mixing bowl, cream together 1/2 cup of butter and 1 cup of sugar. Next mix in the 2 beaten eggs to the butter mixture. In a separate bowl, mix together the baking powder, flour and salt. In another separate bowl, mash 1/2 cup of the blueberries with the 1/2 cup milk. Add the mashed blueberries and milk mixture to the butter mixture. Then slowly mix in the flour mixture. When it is smooth, carefully fold in the remaining 2 cups of whole blueberries. Pour the batter evenly into lined muffin tins to make 12 muffins. Sprinkle each muffin with sugar prior to placing the tins in the oven. Bake at 375º for 25-30 minutes.
