2 lbs. pea beans
¼ lb. salt pork
2 tsp. salt
1 c molasses
1 tsp. dry mustard
2 T. brown sugar

Preheat oven to 250º

Quickly bring to boil 2 lbs. pea beans and then let soak 1 hour. Then cook until skin burst. Drain, keeping water.

Cut ¼ lb. salt pork into 2 pieces. Put 1 piece on bottom of pot. Add beans. Mix remaining ingredients and pour over beans. Add enough water to cover. Place remaining half of salt pork on top of beans, rind side up. Bake 5-7 hours. Uncover the last half hour.
